In 2003, the founder and president of the Crimson Cup, Greg Ubert, published the first edition of Seven Steps to Success: a Common-Sense Guide to Succeed in Specialty Coffee. Now in its second printing, the book has inspired more than 300 business owners and managers to create thriving independent cafes in their local communities.

“I wrote this book because I discovered that entrepreneurs need a proven process to open and run a cafe in their local communities,” Ubert said. “I have seen too many small business owners making critical mistakes in their business.”

Now in its second printing, the book has inspired more than 300 entrepreneurs to open independent cafes in their local communities.

The story of the 7 steps began in 1991. A recent Harvard As a graduate, Ubert discovered that he couldn’t fall in love with computer software from his first job.

During this time, he discovered a passion for coffee and saw a growing opportunity in the first wave of the specialty coffee movement.

So he returned to his hometown of Columbus, Ohio and started a coffee roasting business with a small roaster in a one-room office. With little business experience – and none in the coffee industry – he learned coffee roasting from the ground up.

Ubert decided that his mission would be to blend and roast a better cup of coffee. “I thought people could taste the difference,” he said. “And my clients did!”

However, when it came to making a profit, some of his cafe customers struggled.

“As a small business owner I really don’t like to see small businesses fail, so I decided to help,” he said.

He studied coffee operations, developing a service platform called 7 Steps to Success. This proven track record teaches entrepreneurs with little to no coffee experience how to run profitable coffee based on exceptional quality, service and other factors.

“The Seven Steps program offers a proven system of success in all areas of the business: store layout and design, products, equipment procurement, operating manuals and marketing materials,” Ubert said.

“The book also includes a business plan for a cafe,” he added. “We don’t expect future business owners to be accountants, but we want them to know the numbers. This is extremely important if you want to make a profit!”

From concept to opening day, 7 Steps Coffee Startup Consultants accompany new coffee owners every step of the way.

“As a roaster, we want our coffee shop customers to be really successful,” Ubert said. “Our philosophy is that Crimson Cup only succeeds when our customers are successful.”

As each new store draws to a close, a 7-step trainer arrives on site to show owners and staff how to prepare drinks and manage coffee. After several days of hands-on training in the new store, the trainer stays on site to make sure the opening day goes smoothly.

Some Crimson Cup customers have opened several cafes through the 7 Steps program.

Coffee Jerks, a growth Oklahoma chain of local and independent cafes, opened its first store in november 2018. The partners Kenny wooldridge and Preston Moon and investor Chris Rutherford now has stores in Oklahoma City, Edmond and Yukon, Oklahoma.
